Bruschetta al Pomodoro

Ripe tomatoes marinated in grassy olive oil, piled onto garlic-rubbed toast still warm from the pan. The true Roman bruschetta asks for excellent bread, peak-season tomatoes, and nothing else. Fifteen quiet minutes, four ingredients done properly, and the simplest possible opening to supper for two on almost any summer evening.

The Story

Bruschetta began as bruscare, to roast over coals, and in the countryside around Rome it was the olive harvest made edible: thick day-old bread toasted on the fire, rubbed with a cut clove of garlic, and drenched in the new oil. The tomato topping came later. What has never changed is the honesty of it. There is no sauce to adjust and no technique to master, only a chain of quality from the bread to the tomato. Choose a dense rustic loaf, vine tomatoes that smell like the garden, and oil you would be happy to taste from a spoon.
